Many studies show that breakfast is the most important meal of the day. Whether you believe the studies or not, one thing is for sure, breakfast may be the most delicious meal of the day. From bacon and eggs to waffles, pancakes, breakfast burritos, hash browns and countless combinations – many with those famous Hatch Green Chiles – there is a breakfast treat for every taste near Mariposa. And you can always top if off with a cup of joe. We headed out on a culinary journey to find some of the best breakfasts near Rio Rancho to get your day started deliciously.

1. Cool Beans Cafe

Cool Beans is Mariposa’s exclusive neighborhood café serving espresso drinks, fresh brewed coffee, tea, smoothies, pastries, hot sandwiches and more. Located within the Mariposa community center, it serves customers in an inviting space, hosts regular events and offers catering upon request. Seasonal and specialty favorites include gingerbread lattes, pumpkin spice lattes, Vanilla Oat milk lattes and savory breakfast sandwiches. Open Wed.-Sat. 7 a.m.-1 p.m.

2. Weck’s

Two things consistently come up in online reviews of Wecks. Delicious food and great service. Wecks has been serving up breakfast in New Mexico since 1991 and now has 11 locations, including Rio Rancho. We love that many of the plates start with “Full Belly,” because you won’t leave hungry. We’re talking 4 egg omelets, fluffy French toast or huevos rancheros with red and/or green chili, just to name a few of the options; and don’t even get us started on the strawberry cream cheese pancakes.  Weck’s also does lunch.

3. Hannah & Nates

We love putting our own spin on things in New Mexico, and that is especially true with breakfast at Hannah & Nates. Think about Carne Adovada Breakfast Enchiladas, New Mexico “Heavenly” Hash or breakfast tacos. Heck, they even turn a New York favorite, the bagel into a New Mexico delight topped with eggs, bacon, cheese and yes, green chile. Set in a historic Corrales building, they also do specialty coffees.

4. Lily and Liam Bistro

At Lily and Liam they go all out with some incredible takes on traditional breakfast items. There is the NM Baby -a Dutch Baby filled with short-rib, eggs, muenster, avocado and green chile or Short-rib Street Tacos with eggs, potatoes, short-rib, green chile and beans. You will also find an amazing brioche, crepes or a honey and cream cake. And maybe the best part, breakfast is served all day, 7 a.m. to 3 p.m. every day of the week.

5. Hot Tamales

At Hot Tamales they say, “If you get excited every time you hear the word “chile”, then you’ve definitely come to the right place. Hot Tamales New Mexican Kitchen is a restaurant that celebrates everything the Land of Enchantment has to offer.” But honestly they had us at Hot Tamales Cakes – chicken and green chile tamale cakes fried golden, dressed with avocado vinaigrette, lime sour cream, and pico de gallo. Served with two eggs and a sopaipilla. If you need a little less spice they can do things “gringo” style as well.

6. Flying Star Café

They’ve been here since 1987, which has to say something. Traditional breakfast favorites made with locally sources ingredients is a hallmark of Flying Star in Corrales. It is breakfast all day, whether you are looking for a unique take on Avocado Toast or an old fashioned favorite like French Toast. And they do their own fresh roasted coffee.

7.  Range Café

While not strictly a breakfast restaurant, they also do lunch and dinner, Range Café’s breakfast menu is always a crowd pleaser. We love the idea of a green chile “egg-chilada” and a Papas con Carne. Top it all off with a friendly staff and you’re all set for the day.

8. Café Bella Coffee

A local favorite specializing in fair-trade, organic, single-origin, craft, locally micro-roasted coffee and espresso, Café Bella also serves up great hand-crafted breakfasts. You can go sweet with a chocolate panini or savory with a carne adovada bagel sandwich all in a cute and casual setting.
