Mariposa is howling with excitement as it welcomes its latest addition to the community, the Screaming Coyote. Nestled at 2500 Parkway Avenue in Rio Rancho, this charming new bar and restaurant offers a fresh take on local dining, just steps from the Mariposa Community Center.
This unique spot is the brainchild of a dynamic mother-and-son duo, Francesca and Kellen Wilson. Inspired by the eerie yet iconic nighttime calls of Rio Rancho’s coyotes, the Screaming Coyote reflects a blend of local culture and community spirit.
Whether you’re a newcomer getting acquainted with the “screaming” coyotes or a long-time resident familiar with their serenades, you’ll feel right at home here.
WHAT TO EXPECT
The Screaming Coyote serves up a full menu of bar-style food and an impressive selection of beverages. From local beers on tap to canned drinks and a curated wine list, there’s something for everyone. And soon, cocktails will be joining the lineup.
For sports fans, multiple screens ensure you never miss a game and the staff is happy to accommodate requests for games available through their subscription services.

HOURS & LOCATION
It is located at 2500 Parkway Ave., in Rio Rancho, right next to the Mariposa Community Center. It is open Thursday through Sunday from 2 p.m. to 8 p.m., with plans to extend hours soon to noon to 10 p.m.
